Staff stated that one of the counters including a whipped cream machine were on time but they were not listed on the plan as time control units or were labeled as such. The temperature of the heavy cream inside the whip cream machine was 64°F.

  • Item 16Bakery

A container with 17 big blocks of butter were on the counter next to the dough sheeter. The temperature of the butter was 67-71°F. The food employee explained how she needed the butter soft for her preparations and the butter was taken out of refrigeration for several hours. The inspector discussed with the food employee how this butter could be on the time control.

  • Item 16Lido Café Grill

A pan with raw shell eggs was on time control on the food preparation counter but was not labeled with a discard time. This was corrected.

  • Item 16Room Service Menu

The consumer advisory in the room service menu was very different from the one required in the VSP Operations Manual. Staff stated that it was a translation from a German version of a consumer advisory. It stated: US health authorities indicate that dishes containing uncooked or partially cooked animal products, as well as egg dishes, salmon fillets, cured meats and also beef fillets, must be classified as 'not entirely safe for human consumption'.

  • Item 16Lido Café Grill

Staff provided and installed the needed signs in all three areas during the inspection.

  • Item 41Outbreak Prevention and Response Plan (OPRP)

Although there was repeated information identifying the non-chlorine cleaner/disinfectant chemical to use for surface treatment and the 1 to 16 dilution, there was no specification of what that meant in a part per million concentration. Recommend as well that the planners provide test strips to staff on the ship so the final mixed solution can be tested routinely to ensure the minimum concentration remains in the solution containers during use.

Food storage (provisions)2 findings

  • Item 19Dry Store

The dry store room was overpacked, with limited access to all areas. A few boxes of food and a bag of rice were stored on the deck.

  • Item 27Dumb Waiter

The dumbwaiter, which is no longer used, had food debris around the back corners.

Dining rooms1 finding

  • Item 21Europa Port/Starboard Coffee Stations

The water supply lines and electrical wiring under the espresso machines at both coffee stations were draped on the counter, making cleaning difficult.
